Garlic and Cheese Orzo
- 1/2 pound orzo (regular or whole wheat)
- 1/4 cup Parmigiano Reggiano cheese grated
- 2 Tbsp. butter
- 1/4 cup flat leaf parsley chopped
- 3-4 cloves garlic grated or minced
- Dash of salt and Pepper
- Cook orzo in a large pot according to the package directions (add a pinch of salt when water begins to boil).
- Drain orzo and set aside.
- Melt butter in a large pan over medium heat.
- Add in the garlic and cook until aromatic (approx. 1 minute).
- Add the cooked pasta, cheese, and parsley to the pan.
- Season with pepper and stir thoroughly.
Serve hot.
Refrigerate leftovers.
