Garlic and Cheese Orzo
  • 1/2 pound orzo (regular or whole wheat) 
  • 1/4 cup Parmigiano Reggiano cheese grated 
  • 2 Tbsp. butter 
  • 1/4 cup flat leaf parsley chopped
  • 3-4 cloves garlic grated or minced
  • Dash of salt and Pepper 

 

  1.  Cook orzo in a large pot according to the package directions (add a pinch of salt when water begins to boil).
  2. Drain orzo and set aside.
  3. Melt butter in a large pan over medium heat. 
  4. Add in the garlic and cook until aromatic (approx. 1 minute). 
  5. Add the cooked pasta, cheese, and parsley to the pan.  
  6. Season with pepper and stir thoroughly. 

Serve hot.

Refrigerate leftovers.
