Corn, Avocado, and Tomato Salad

  • 2 cups corn (fresh or canned)
  • 1 avocado diced
  • 1 pint cherry tomatoes halved
  • ½ cup diced red onions
  • 1 Tbsp. lime juice
  • ¼ cup chopped cilantro
  • ¼ tsp. salt
  • 1/8 tsp. pepper

 

 

  1. Mix vegetables together in a large bowl.
  2. In a separate bowl mix lime juice, cilantro, salt and pepper together.
  3. Pour mixture over vegetables.  Toss and serve. 

 Refrigerate leftovers.
