Corn, Avocado, and Tomato Salad
- 2 cups corn (fresh or canned)
- 1 avocado diced
- 1 pint cherry tomatoes halved
- ½ cup diced red onions
- 1 Tbsp. lime juice
- ¼ cup chopped cilantro
- ¼ tsp. salt
- 1/8 tsp. pepper
- Mix vegetables together in a large bowl.
- In a separate bowl mix lime juice, cilantro, salt and pepper together.
- Pour mixture over vegetables. Toss and serve.
Refrigerate leftovers.
