Parve Vegetable Quiche
- ½ bag of frozen spinach or broccoli (or vegetable of your choice)
- 4 eggs
- ½ packet onion soup mix
- 2 Tbsp. low-fat mayonnaise (you may also use regular)
- Dash of garlic powder
- Dash of salt
- Dash of pepper
- 1 pie shell
- Preheat oven to 350.
- Boil frozen vegetable, drain, and cool.
- Mash or chop vegetables into small pieces.
- Combine in a separate bowl the mayonnaise, eggs, garlic powder, salt, pepper, and soup mix.
- Mix in the vegetables.
- Pour into pie shell and bake for 45 minutes or until the quiche is solid.
Serve hot.
Refrigerate leftovers.
