Parve Vegetable Quiche

 

 
  •   ½ bag of frozen spinach or broccoli (or vegetable of your choice)
  • 4 eggs
  • ½ packet onion soup mix
  • 2 Tbsp. low-fat mayonnaise (you may also use regular)
  • Dash of garlic powder
  • Dash of salt
  • Dash of pepper
  • 1 pie shell
  1. Preheat oven to 350.  
  2. Boil frozen vegetable, drain, and cool.  
  3. Mash or chop vegetables into small pieces.  
  4. Combine in a separate bowl the mayonnaise, eggs, garlic powder, salt, pepper, and soup mix.  
  5. Mix in the vegetables.  
  6. Pour into pie shell and bake for 45 minutes or until the quiche is solid.

Serve hot.

Refrigerate leftovers.
